What would cause hot water to run from some of the cold water faucets? I have replaced three of the faucets but hot water still frequently runs out the cold water spigot. It doesn't happen in the kitchen, just the bathrooms.

I'm not a plumber, but ensure that the hot water line is connected to the hot water side of the faucet. Standard I'm pretty sure is the left handle side. Which doesnt necessarily mean the left shut-off valve is the hot water, I've seen the hot water shut off on the right side. Go figure.

If you have Moen single handle faucets you might just remove the handle, rotate the stem 180 degrees and replace the handle. This may apply to other brands with single handles.
