Default Recording while viewing

I bought an VHS-DVD Combo Player Recorder. Is there a way to watch one TV show and record another channel like we could with the pre digital VCR?

That is a feature that varies by product. In order to do that, the tuner must be able to tune two channels simultaneously. It adds circuitry to the unit and thus adds cost. If you bought a bargain priced unit, it might not offer this feature. To my knowledge, most mid-grade or better models do allow you to watch one channel while recording another. The feature would be accessed through the player's menu.
